Cod gratin with crayfish tails

An amazing fish gratin for cosy evenings. The cod can be replaced with slamon if you like, the result will be just as good !


  • Prep Time: 15 min Cooking Time: 20-25 min

  • 4 servings

  • 800 g cod fillet
  • herb salt
  • pepper
  • 1/2 cup water
  • 3/4 cup white wine
  • 3 tbsp lobster stock
  • a little lemon juice
  • 1 dl crème fraiche
  • 2 1/2 dl whipping cream
  • 2 tsp tomato puree
  • 1/2 cup chopped dill
  • 1 can of crayfish tails in layers
  • coarsely chopped dill

Set the oven to 200ºC and grease a baking dish.

Cut the cod fillets into portions and place them in the mold. Salt and pepper.

Whisk together water, wine, stock and lemon juice in a saucepan. Add crème fraiche, cream and finally tomato puree.
Let the sauce simmer for about 10 minutes. Reduce the sauce if it feels too thin, add the dill.

Let the crayfish tails drain, distribute them evenly over the fish and finally pour over the sauce.
Gratinate in the oven for about 20 minutes or until the fish is ready. Sprinkle with chopped dill.

Serve with, for example, oven-roasted root vegetables or pressed potatoes.
