Crispy Rhubarb Pie

Rhubarb under a crispy oat cover with caramel flavor. You have to look for more delicious rhubarb pie. Serve with vanilla ice cream.


  • Prep Time: 15 min Cooking Time: 50 min

  • 6 servings

  • 2 dl oatmeal
  • 2 dl sugar
  • 1 3/4 dl wheat flour
  • 1/2 tsp baking powder
  • 1 cream vanilla sugar
  • 1 tsp salt
  • 125 g butter
  • 1/2 cup whipping cream
  • 1/2 dl light syrup
  • 500 g rhubarb
  • butter for the mold

Set the oven to 150°C.

Mix all dry ingredients in a bowl.

Melt the butter in a saucepan together with the cream and syrup. Mix in the dry ingredients.

Trim and cut the rhubarb into approx. 4 cm pieces. Put them in a greased oven-proof form about 26 cm in diameter (for 6 ports). Spread on the batter.

Bake the pie in the middle of the oven for 40-50 minutes, until nicely colored.

To serve: Serve warm with vanilla ice cream.
