Lemon Curd & Jam Squares

A simple cake but with a lot of flavor. Lemon and raspberry is a nice combo. I cleaned out the fridge and found open jars of jam and lemon curd. So, why not bake a good cake. Serve it with e.g. whipped cream.


  • Prep Time: 10 min Cooking Time: 20 min.

  • 4-6 servings

  • 60 g butter, softened
  • 0.5 dl light brown sugar
  • 1 large egg
  • 1 1/4 dl all-purpose flour
  • 0.5 tsp baking powder
  • 0.5 tsp vanilla extract
  • one pinch of salt
  • 1 tbsp lemon curd
  • 1 tbsp raspberry jam

Preheat oven to 175 C degrees. Line a small baking pan with parchment paper.

In a bowl, stir butter and sugar together until creamy. Add the egg and stir until smooth. Stir in the flour, baking powder, vanilla and salt, until smooth. Pour the batter into the prepared pan. Top with lemon curd and jam and make swirls with a fork. Bake for approx. 20 minutes until the cake is golden brown. Let the cake cool completely.
