{"id":309,"date":"2023-03-20T21:35:03","date_gmt":"2023-03-20T21:35:03","guid":{"rendered":"https:\/\/www.freeweb.nu\/recipes\/?p=309"},"modified":"2023-03-20T21:35:03","modified_gmt":"2023-03-20T21:35:03","slug":"no-bake-turtle-cheesecake","status":"publish","type":"post","link":"https:\/\/www.freeweb.nu\/recipes\/no-bake-turtle-cheesecake\/","title":{"rendered":"No Bake Turtle Cheesecake"},"content":{"rendered":"<p>A delicious No Bake Cheesecake with nuts, caramel sauce and whipped cream.<\/p>\n<hr \/>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-35\" src=\"https:\/\/www.freeweb.nu\/recipes\/wp-content\/uploads\/sites\/6\/2023\/03\/time.gif\" alt=\"\" width=\"50\" height=\"50\" \/><\/p>\n<ul>\n<li><strong>Prep Time: 60 min Cooking Time: 15 min<\/strong><\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-73\" src=\"https:\/\/www.freeweb.nu\/recipes\/wp-content\/uploads\/sites\/6\/2023\/03\/number.gif\" alt=\"\" width=\"50\" height=\"50\" \/><\/p>\n<ul>\n<li><strong>16 servings<\/strong><\/li>\n<\/ul>\n<hr \/>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14\" src=\"https:\/\/www.freeweb.nu\/recipes\/wp-content\/uploads\/sites\/6\/2023\/03\/ingredients2.gif\" alt=\"\" width=\"50\" height=\"50\" \/><\/p>\n<p><strong>Crust:<\/strong><\/p>\n<ul>\n<li>2 1\/2 cups chocolate cookie crumbs like Oreo or similar<\/li>\n<li>1\/2 cup butter melted<br \/>\n<strong>Caramel:<\/strong><\/li>\n<li>30 wrapped chewy caramel candies (I use Kraft) \u2013 250g<\/li>\n<li>1 cup heavy cream<\/li>\n<li>1\/8-1\/4 teaspoon salt (depending on how salty you like your caramel)<\/li>\n<li>1 cup chopped pecans<br \/>\n<strong>Cheesecake:<\/strong><\/li>\n<li>24 oz cream cheese, room temperature 3 packages, 750g<\/li>\n<li>1 1\/2 cups powdered icing sugar<\/li>\n<li>1 teaspoon vanilla<\/li>\n<li>1\/2 cup heavy whipping cream<\/li>\n<li>Ganache:<\/li>\n<li>1\/3 cup chopped dark chocolate or chips 50g<\/li>\n<li>1\/3 cup milk or cream<br \/>\n<strong>Optional:<\/strong> caramel sauce, whipped cream and pecans for garnish<\/li>\n<\/ul>\n<hr \/>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17\" src=\"https:\/\/www.freeweb.nu\/recipes\/wp-content\/uploads\/sites\/6\/2023\/03\/cooking.gif\" alt=\"\" width=\"50\" height=\"50\" \/><\/p>\n<p>Line a 9&#8243; Springform pan with parchment paper, pinching it in between the bottom and the outer ring. This isn&#8217;t necessary but will allow for easy removal.<br \/>\nCrust<br \/>\nCombine cookie crumbs and butter. Press into the bottom of the prepared pan evenly.<\/p>\n<p><strong>Caramel:<\/strong><br \/>\nIn a medium pan, combine caramels and cream. Cook over medium heat, stirring frequently, until completely smooth and melted.<br \/>\nStir in pecans and pour into crust. Refrigerate for 30-60 minutes until firm\/dry to the touch.<\/p>\n<p><strong>Cheesecake:<\/strong><br \/>\nWith an electric mixer, beat cream cheese until smooth. Add powdered sugar and vanilla and beat until smooth and combined.<br \/>\nAdd cream, and beat on low until incorporated, then high until thickened and fluffy (should nearly hold stiff peaks when you pull the beaters out of the bowl)<\/p>\n<p>Spread over cooled caramel in pan. Refrigerate for 1-2 hours or until nearly set.<\/p>\n<p><strong>Ganache:<\/strong><br \/>\nCombine chocolate and cream in a small pan. Cook over low heat, stirring constantly, until melted and smooth.<br \/>\nSpread over cheesecake layer evenly.<br \/>\nRefrigerate a minimum of 6 hours, or overnight for best results.
