Salt and pepper.<\/p>\n<p>Whisk together water, wine, stock and lemon juice in a saucepan. Add cr\u00e8me fraiche, cream and finally tomato puree.<br \/>\nLet the sauce simmer for about 10 minutes. Reduce the sauce if it feels too thin, add the dill.<\/p>\n<p>Let the crayfish tails drain, distribute them evenly over the fish and finally pour over the sauce.<br \/>\nGratinate in the oven for about 20 minutes or until the fish is ready.
